We duly received your request of the 4th instant, but are not in a position to
give you an opinion as to the importation of macaroni wheat from America to
Germany.
The better grades of macaroni are made exclusively from the hard Taganrog
¢ wheat. We obtain our supply chiefly directly from Saloniki or Marseilles, the
| latter place being the market of the world for hard semolina.
Of late years several large semolina mills have been established in Germany,
which furnish a fair article, thus making us less dependent on foreign countries
for our demands. As far as we know these mills get their supplies by way of
&gt; Antwerp, which of late has been considered the market for foreign wheat.

Replying to your favor of recent date, we desire to state that there will always
be a demand in Germany for wheat suitable for the manufacture of macaroni or
other goods made of dough. This wheat is now imported in large quantities from
Russia (Taganrog). Whether the American wheat is of such quality as to be suitable
for the purpose mentioned we are unable to say without seeing samples and having
an approximate price.

In reply to your request of yesterday, we will inform you that for the manufacturing
 of hard-wheat semolina, which is necessary for the making of macaroni and
other food purposes, we are importing large quantities from southern Russia (Taganrog,
 Berdiansk, and Odessa) throughout the year.
For some time we have been unable to buy hard wheat from America to any
extent, owing partly to the lack of propositions from there and to the further fact
that American wheat was higher in price than that from Russia. Last spring we
succeeded in obtaining several hundred tons of Plata Candeal wheat, but this
proved to be of too light weight, as to quality, for our purpose.
No hard wheat suitable for the production of macaroni is grown in Germany,
and a proposition for hard wheat, which is clear and glassy, containing no softwheat
 kernels, and weighing 78 to 81 kilograms (170 to 180 pounds), would receive
consideration.

; Regarding the so-called macaroni wheat, the essential points are that the same
1s clean, that it is of uniform yellow color, has a very hard kernel, and is free from
White kernels and seeds of weeds. Such a hard wheat will completely defeat all
fompetition from southern Russia. :
There is no German production of this class of whe
dependent on the import from other countries.
