is increasing rapidly in the United States. We give you herewith
copy of letter received from our friend in Japan, which reads as
follows:
Macaroni is largely eaten in Japan; in Tokyo you will find macaroni shops in
every block. Everywhere you go in Japan you will see them. Itis.known here
under the names of *‘ udon” and ‘‘somen;” the former being eaten all the year
round, but mostly in winter, and the latter in summer.
American flour, so far, is not strong enough for making udon and somen,
though used to some extent for that purpose. Home-made flour has been mostly
used. If therefore the macaroni flour, which I understand by the name to be very
good for making macaroni, be obtainable at a reasonable price, there would be
much business in the article in Japan. I should like to have samples of the wheat
and flour made of same by first opportunity. Owing to a very short crop of
Wheat this season there is a great influx of wheat (Chinese, Indian, and American)
into this market. If your samples reach me quickly and be found good for the
