That stuff mixed or softened with cold, clear water (nothing else) will produce
the very best pastes. A little powdered saffron may be dissolved in the water to
give the paste a light yellow tint (considered by many consumers as given by eggs).
Saffron does not injure or improve the paste—simply gives it a better appearance.
A good article is almost transparent, glassy to the touch, rattles like good walnuts,
and must be very brittle. Age does not improve it. A few minutes of boiling
will cook it. If good it will swell very much, look creamy, is light, easily digested ---in
 fact, makes a cheap, nice, wholesome food.
