os COSTS OF PRODUCING SUGAR BEETS Through improvement in machinery and processes, much gain accrued in the average extraction of sugar from beets. The average extraction for the five-year period 1909-1913 was 12.6 per cent, and the average for the five-year period 1921-1925 was 13.8. On the other hand, the average sugar content of the beets during that period slightly declined.
