518 II.—Municipal Regulations respecting the Trade in Meat, &c., in Munich. {Extracts). Art. 22. The provisions of the Law of June 3rd, 1900, respecting the inspection of cattle for slaughter and meat, as well as the following regulations and ordinances of the Federal Council, shall apply to the official inspection of meat destined for human consumption. As regards the slaughtering of animals, the provisions of the Slaughtering and Stock- yard Ordinance, and in so far as slaughtering outside the abattoir is concerned, also the provisions of the Inspection and Public Sale Ordinance of 31st March, 1903, shall apply. Attention is also called to these latter provisions so far as concerns the handling of meat, &c., imported into the town in a raw state from districts within the Customs area. Finally, attention is called to the “ Freibank ” * Ordinance of March 31st, 1903. Art. 23. The transportation, storing, exposure for sale, and the sale of meat, entrails, and meat products, as well as the handling and preparation of these articles, are subject to control according to the present regulations. Art. 24. In all dépôts for the sale of meat in the town only such meat may be exhibited for sale or sold as has been inspected, approved and stamped as fit for sale in accordance with the provisions of the Slaughtering and Stockyard Ordinance and the Ordinance respecting the inspection of food. Art. 25. It is forbidden :— (a) To sell or offer for sale outside the “ Freibank ” meat entrails, or other meat products obtained from animals either immature or not completely healthy. (b) To inflate slaughtered animals, or to offer for sale, or sell carcases in an inflated condition. (c) To expose for sale in an unplucked condition dead fowls which do not come within the category of game. (id) To place meat and meat products, fowl or game of any kind directly on ice. This regulation does not apply to fish. Art. 26. Persons engaged in supplying meat and meat products to the public must be provided with a light coloured washable overall, or at least with a white apron with a broad breast piece and sleeves reaching over the elbows, made of light coloured washable material. Art. 27. Rooms used for the sale of meat or for the preparation of meat products must have watertight floors, capable of being easily cleaned. The walls of these rooms must be cohered either with washable light paint or with a covering of tiles or similar material. The iron hooks, nails or bars from which the meat is hung must be rust proof and well galvanised when they are used in such a way that the meat comes into direct contact with them. Art. 28. Meat and meat products must always be conveyed through the streets of the town cleanly covered. It is forbidden to stand, sit or lie on the meat or in that portion of the vehicle reserved for the carriage of the meat. The exposure, hanging, or exhibition outside the place of sale of meat and meat products of any kind, except unplucked birds, unskinned game and fish is forbidden except in the provision market. Art. 29. Meat intended for immediate sale shall be so exhibited in the places of sale that it may be seen and chosen by intending purchasers. The prices of the meat on sale in business premises shall be displayed in a legible manner outside of the shop according to the different sorts (ox beef, cow beef, veal, pork, wether mutton, sheep mutton, lamb, &c.), should extra prices be asked for special qualities of meat, such as fillet, sirloin, cutlets, loins, &c., these qualities and the prices must also be notified outside. When ox beef and other beef (steer, cow and heifer), are offered for sale simultaneously, these kinds of meat must be kept quite separate. It is forbidden to indicate on the board the price of ox beef when such is not available for sale. Butchers who do not kill oxen themselves, but obtain the meat otherwise and sell it, or indicate the price of such meat on the board, must be able to account for the purchase of this meat by means of a statement of the vendor, giving the date and the weight. Art. 30. In the same way as is above prescribed, the delivery notes given to customers showing the quality, description, weight and price of the meat supplied, the aforesaid kinds of meat shall be indicated separately as also the price and weight of each sort. Art. 34. Butchers are bound to display in a conspicuous position in their shops the extracts from the Local Police Ordinance regulating their trade. Art. 35. Butchers who offer for sale the flesh of horses, dogs, &c., or products contain ing such flesh, must add to the name Butcher,” the respective kind of animal sold (e.g., “ Horse Butcher ” or “ Horse and Dog Butcher ”). * Public stall fox the retail sale of inferior meat at low prices.
