the meat. In the case of pigs, the fat is sometimes melted down before being 
sold. There is a considerable " run ” on this inferior class of meat, so much so, 
that it has been found necessary to limit the quantity which may be sold to any 
one purchaser. This rule is, however, partly intended to prevent people buying 
with the object of re-selling, and it is further provided that none shall be sold 
to any person carrying on the trade of a butcher. Owners of carcases con 
demned to be sold at the Freibank receive the amount realised on the sale of 
the meat subject to a deduction for the expenses incurred. They are, moreover, 
protected from loss by the system of compulsory insurance of cattle which is 
in, force in Saxony. The total sales of “ inferior ” meat at the Freibank in 
Chemnitz in 1905 amounted to 2,430 cwts., on which a sum of £6,234 was 
realised. 
It may be mentioned that horse and dog flesh are not sold at the Freibank 
though both are subject to the same rigid inspection as other kinds of meat. It 
was found, for instance, that no less than 293 of a total of 611 dogs and 127 of 
the 982 horses slaughtered for consumption in 1905 were more or less diseased, 
but only five of the dogs and nine of the horses were so badly affected as to 
necessitate the destruction of the entire carcase.

In the case of beef and pork, which are the only kinds of meat to be 
considered in relation to the dietary of working class families, the Freibank 
prices for raw meat are just about half those charged in the ordinary retail 
shops as will be seen from the accompanying summary table of the predominant 
prices paid at such shops in Chemnitz, as ascertained from personal inquiries 
made of the proprietors :—
