purchase. He has also a prejudice against fatty cuts. The predominant price of 
beef in October, 1905, was from Id. to 8d. per lb. except for steak (which working- 
class households do not buy), which soldat from 11c/. to Is. 2d. Pork generally 
cost from 8|d. to 9^d. per lb. The best cuts of mutton cost lOd. to ll^d. and the 
cheaper run as low as 8d. Veal ranged from 8§d. to lid., with Is. 3§d. for 
homes. As elsewhere sausage forms an important part of the flesh diet of most 
households, and it is made in various ' qualities, though every butcher has his 
own specialities as well as his own prices. The staple kinds are “ liver ” 
sausage at 9d. per lb. and beef and pork sausage at 11c/. In connexion with 
the abattoir, provision is made for the public sale of the inferior meat which is 
not passed for sale in the open market, and this “ Freibank ” meat is always in 
ready demand at the hands of the working classes and the poor. The average 
prices paid for this meat during the year 1904-5 were as follows :—Beef 4\d. 
to 5\d. per lb. (the lower price for cow and the higher for ox meat), mutton 5d. t 
pork 5d., and veal 5\d., prices from 40 to 50 per cent, lower than those of meat 
of good quality. There are several shops where horse flesh is regularly sold, 
and the demand always exceeds the supply. The price ranges from 2\d. to 
3\d. per lb. for ordinary cuts, with 4\d. for fillet, while horse sausage costs 4\d. 
per lb. There is a larger demand in winter than in summer. Dogs are 
occasionally killed, though not at the public abattoir, and the flesh is used for 
its supposed efficacy against consumption. 
The appended Table gives the prices usually paid by the working classes 
for meat in October, 1905, and at the time of the investigator’s visit in August,. 
1906 ; in the interval there had been a general advance of from Jd. to 1 \d. 
per lb. 
Predominant Prices paid by the Working Classes in October, 1905, and 
Prices of food at Mülhausen are slightly higher than at Berlin. Taking 
the level of prices at Berlin as 100, the corresponding figures for meat and for 
other food at Mülhausen are 101 and 103 respectively. Owing to the distance 
of the town from coalfields, however, coal is very dear at Mülhausen, the 
index number for this being 146. This high figure has the effect of raising 
the general index-number for prices to 109. The index-number for rent and 
prices combined is 97.
