Beans has come to be recognized, and it is becoming more
popular. The enlargement of this new utility in future is
the most promising and of far reaching significance.
(4) Bran Cake As Sov-Maxine MATERIAL
The Brewing Experiment Station of the Ministry of
Agriculture and Forestry, Tokyo, has taken to the use of
Bean meal in place of Beans as soy-making material. The
experiments have established beyond question the former’s
advantage in respect of quality and costs, compared with
Beans of the same kind, and the Station people are
encouraging the use of Bean meal. Already in Japan
proper, soy breweries that use Bean meal in place of Beans
are appearing in an increasing number.
Lately, the S.M.R. Co. Central Laboratory, Dairen,
has succeeded in inventing an advanced, logical process of
brewing soy from round cake and Bean plate crushed fine
as a substitute for Beans. The soy made by the process
is earning a good reputation. The use of Bean Cake in this
new field has a very rosy outlook.
