Uses of Beans SECTION I.—GENERAL REVIEW The uses of Beans may be roughly divided as follow :— (1) As food-stuff: In the chief producing centres in the Orient like Japan, Chosen, and China, Beans have been cooked, ss they are, from old times, to be served at table. Otherwise, they are made into Bean curd, Bean flour, Bean malt, “miso” and soy, making them an indis- peranble item of food. (2) Cattle Feed: Needless to say, Beans being rich in nutritive value, furnishes to the domestic animals a very excellent feed. However, a high fatty percentage not being required for a cattle-feed, Bean Cake serves all the better for the purpose than Beans. But, in China and Chosen, no inconsiderable amount of Beans are still used for cattle-feed. (8) Tertilizer: Beans containing a high oil percent- age, they will make a very poor manure, the oil contents 2
