The  consumption  of  horseflesh  has  increased  of  late.  This  is  undoubtedly
due  to  the  enhanced  prices  of  other  meat  and  not  to  the  growth  of  poverty.
To  the  flesh  of  horses  in  good  condition  there  appears  to  be  no  scientific
objection  ;  its  nutritive  and  digestive  qualities  alike  are  said  to  be  good,  and  the
dislike  which  it  inspires  in  some  places  seems  to  be  due  to  its  appearance  and
taste.  But  the  great  defect  in  Germany  is  that  worn-out  horses  are  slaughtered,
without  being  given  two  or  three  weeks’  grazing,  which  would  put  them  into
good  condition.
There  is,  as  already  indicated,  a  large  consumption  of  sausage.  The
advance  in  the  price  of  fresh  meat  made  sausage  dearer  also,  and  in  1906  the
following  were  the  prices  per  lb.  of  the  more  popular  kinds  :—Blood  sausage
(“  black  puddings  ”),  6Jd  ;  liver  sausage,  inferior,  5Jd.  ;  liver  sausage,  better
quality,  8J-<i.  ;  “Mett”  sausage,  8%d.\  ham  sausage,  Is.  3Jd.  ;  while  smoked
ham  cost  Is.  Id.

Prices  at  Dortmund  are  low.  Taking  prices  at  Berlin  as  100,  the  index
number  for  the  price  of  meat  at  Dortmund  is  105,  for  other  food  98,  and  for
coal  70,  the  general  figure  for  all  commodities  being  96.  Of  the  33  towns
included  in  this  enquiry,  Breslau  and  Königshütte  alone  showed  a  lower  prices
level.  The  index  number  for  rent  and  prices  combined  is  90.
