(2) troop VALUE oF BEANS FROM STANDPOINT oF NEW THEORY OF NUTRITION From the standpoint of the new advanced theory of nutrition up-to-date, the general ingredients hardly form the criterion for deciding the nutrition value of food. In addition, the kinds of ingredients, especially the quality of the protein or the kind and percentage of aminic acid that constitutes the protein should be studied out. More- over, the latest form of the vitamin theory, together with the animal experiments, ought to be taken into reckoning bo decide the nutrition value fairly and completely. Concerning the food value of Beans, considered in the light of all the above, we might conclude that Beans, on the whole, contain sufficient of tne necessary kind and quelity of aminic acid that constitutes the protein of Beans, demonstrating beyond doubt the ample nutrition value of the protein of Beans. Next, by practical animal experi ments, the protein of Beans is proved to be the most ex- cellent among the vegetable proteins, only next to beef and fish.
