Von dem gesamten kaufmännischen Personal von 16625 Köpfen sind beinahe *®%0 weibliche Angestellte, vor allem Verkäufeninnen in den Bäckerläden, denn die amtliche Statistik hat den gesamten sogenannten „Produzentenhandel“ zur Industrie und zum Handwerk gezählt. Der Anteil der Angestelltenschaft an der Gesamtzahl der Erwerbstätigen liegt mit 5,8 Proz. sehr niedrig, die Angestelltenfunk- tionen, vor allem der Verkauf, werden im Bäckereigewerbe vielfach von den Familienangehörigen, besonders von den Ehefrauen des Geschäfts- inhabers übernommen, der Anteil dieser Gruppe stellt sich auf 18,3 Proz. aller Erwerbstätigen. 16, 7
