As already stated, sausage would appear to form about 27 per cent, of the
meat diet of the working classes. A large variety of sausage is eaten, and the
following Table gives the prices charged in October, 1905, and September,
1906, by the Co-operative Society, with its 15 shops, for the sorts most in
demand as well as for preserved meats :—

Inferior qualities of bacon were obtainable in the town in 1906 at lower
prices, 9Jd. for fat and 10\d. for lean, whilst for the lowest grades (almost
solely fat) prices were in some cases as low as 8¿á. and 8 já.
It should be added that horseflesh cost in 1906 3jd. and 4|á. per lb.,
which was a slight increase on the prices of the preceding year. There are
several horse butchers’ shops in the centre of the town, conspicuous owing to
their special signs.
Compared with other towns in Germany the price of meat at Essen was
very low. Taking predominant prices in Berlin as 100, the index number for
the price of meat in Essen is 98. The index number for “ other food ” is 105,
and for coal 66, prices as a whole being represented by 99. The index number
for rent and prices combined is 92.
