ls nahmen mag es geben, sie sind uns nicht bekannt, sie 
-irden aber auch da nur die Regel bestätigen — haben die 
lößeren Brauereien Norddeutschlands aus Anwendung von 
: rrrogaten Verzicht geleistet. Trotzdem stehen sie dem Publikum 
- zenüber noch vielfach unter dem Verdacht, Surrogate zu 
■ cwenden. Warum? Surrogate sind gestattet, sie werden 
' rsteuert, werden unter Kontrolle und Aufsicht des Staates 
: cwendet! Man spricht von echtem und unechtem Bier. 
( as heißt da „echt"? Doch nur, daß bloß Malz, Hopfen, Hefe 
_ib Wasser zur Herstellung eines solchen Bieres verwendet wird. 
:’i§ tut schon längst der Norden in seiner großen Mehrheit, 
- en so gut wie der Süden. Aber nur der Süden braut 
( chte Biere". Grund: der Süden hat das gesetzliche Verbot. 
: Aber auch die Brauer waren nicht einig in dieser Frage, 
■ ross standen sich vielmehr die Auffassungen gegenüber. 
( :e Brauerei für obergärige Biere (Süßbiere und Braunbiere) 
märte, daß es ohne Surrogate nicht gehe, llnd darin hat 
:'ren der Steuerentwurs recht gegeben, er trennte des- 
: lb obergärige von untergärigen Bieren bezüglich des 
■ wbotes. Nun bleiben die Brauereien für untergärige 
: lere (Lagerbier). Diese lagen aber ebenfalls lange im Kampf. 
: > schied sich Groß und Klein. Die größeren Brauereien 
■ rren für, die kleinen gegen das Verbot. Das hat seine 
_»gründung. Die größeren Brauereien brauchen infolge der 
^'ihlanlagen (Kaltluftmaschinen) für ihre Kellereien die Snrro- 
- ;te längst nicht mehr, die kleineren Brauereien hielten sie 
■ :gegen für nötig. Nun hat sich endlich aber auch die Klein- 
7 Huerei entschlossen, für das Verbot einzutreten, es also mit 
: nen Opfern für bessere Anlagen über sich ergehen zu lassen. 
: hne Opfer geht das nicht, deshalb sagten wir früher: Wird 
munsten der Kleinbrauerei eine Spannung von 1 Mk. ge 
rben, so kann die Begründung nur in diesem Umstande ge- 
- nden werden. Dabei ist noch folgendes anzunehmen und 
erwägen: Hätte die Kleinbrauerei, als sie dem Verbot 
7 stimmte, geahnt, daß sie zum mindesten das Doppelte zahlen 
- üssc an Steuer — und sollte die jetzige Vorlage Gesetz werden, 
: llßten dabei doch unbedingt die untersten Stufen erhöht 
(.erden —, so hätte sie sicher ihre Zustimmung versagt. Vor- 
: lssetzung war da die Minderung der seitherigen Steuer, 
- cht die Erhöhung derselben. 
( Fragen wir nun: welche Surrogate gibt es? 
7 Nur Hopfen und Malz sollen verwendet werden, hierfür 
' aren also Surrogate zu suchen. Da scheiden von vornherein 
■ opfensurrogate aus, die gibt es nicht. Ebenso schwer wie 
§_r Aberglaube rotten sich, so unverbürgt sie sein mögen, 
°rn aber auch Gerüchte beim Publikum aus. Das Publikum 
■ in manchenKreisen wenigstens — erzählt sich noch vonHopfen-
