It will be seen that in spite of the differences in method of collection and
computation, the above prices in so far as they relate to the same cuts do not
differ materially from those shown in the previous Table, and ascertained by
direct inquiry at the shops. The figures also indicate, on the whole, a slight
reduction of meat prices since October, 1905.
With regard to horse-flesh it may be stated that there are in Breslau
12 shops at which no other kind of meat is sold. A visit to any of these
establishments produces the impression that they do a very brisk business.
Nevertheless, few workpeople appear to have any personal knowledge of the
use of horse-flesh. This appeared to be the case also in regard, to the meat sold
at the municipal meat stall, or Freibank, where the flesh of animals which have
failed to pass the standard of soundness required by the meat inspectors is sold
at reduced prices, after all precautions have been taken to render it safe for
consumption as food. Some 16 tons of this inferior meat were sold at the
Freibank during the month in which Breslau was visited for the purposes of
this Enquiry (June, 1906). The sales at this establishment in 1905 amounted
to 170 tons of which 27 tons had to be boiled or sterilized before sale. The
price charged for raw beef was from 5(7. to 6(7. per lb and for boiled beef
%7. to4#l Pork fetched 6(7. to6#. per lb. raw and 0(7. boiled.
