Horse-flesli has long been in favour with the working classes, owing more,
it is asserted, to a local preference for this meat than to inability to buy other
meat. The municipal abattoir has a special department for horses ; there are at
least six horse butchers’ shops, and there are three horse-flesh restaurants, one in
the main street being attractive in appearance and largely frequented. The
prices of this meat have risen considerably of late, owing to the increased
demand and the declining supply of tram horses, consequent on the extension
of the electric tramways, insomuch that Solingen butchers have begun to buy
animals in London, to be slaughtered at home. In 1907, fillet cost l± 2 d.
per lb., ordinary cuts from hd. to 5^d., sausage (made of horse-flesh with pork
or ox fat) from 6|(7. to 7^d., and liver sausage 3d.
The price of meat at Solingen is comparatively low, as also is that of coal,
but, on the other hand, the price of food, other than meat, is high. Taking prices
at Berlin as 100, the index-numbers for meat, for other food, and for coal are
respectively 98, 108, and 70. For all commodities the figure is 101. The
index-number for rent and prices combined is 93.
